Portuguese Grilled Chicken
Learn to cook with Aditya Bal: a limey, fiery grilled chicken that serves one to two

Ingredients
For the marinade:
4 cloves garlic

3 hot green chillies

Small bunch of fresh coriander

¼ tsp salt

6 to 8 black peppercorns

2 limes

1 tbsp extra virgin olive oil

To serve:

2 slices of watermelon
1 English cucumber
A knob of butter to baste
Method
To make the marinade: put all the marinade ingredients into a mortar and bash to a semi fine paste. Taste for a balance of flavor. This marinade should be really limey and hot with the garlic giving it a great pungency.
Make a few gashes all over the chicken legs, then pour over the marinade and rub into the chicken really thoroughly using your hands. Cover and place in the fridge for 4 to 6 hours.
To grill: get your charcoal, gas grill or broiler really hot. Bring the chicken to room temperature and grill the chicken legs, basting occasionally with the butter and turning them over 3 to 4 times. Grill the chicken until nicely charred and cooked to perfection. (till the juices run clear)
Once cooked, remove the chicken to a platter and leave to rest for a few minutes.
Slice the watermelon and cucumber into wedges and strips, place on a platter with the chicken and garnish with more lime and some fresh coriander. Yummilicious!!
