Lemon Herb Roast Chicken


2 tsp lemon zest

2 garlic cloves (minced)

1 tsp fresh thyme

4 tbsp softened butter or olive oil

1 whole chicken (4 to 5 lbs.), patted dry

1 medium onion (sliced)

1 bunch radishes, quartered



Before beginning the process, preheat the oven to 350°F.

  1. Combine Garlic, lemon zest, thyme, and 2 tbsp butter, along with lemon and pepper according to taste and mash all the ingredients until combined. Also, separate the skin from the chicken gently with your fingers.
  2. Put the butter mixture underskin of the chicken spreading it evenly. Wrap wings around the breast and tie drumsticks together.
  3. In a medium roasting pan, place the chicken nicely and arrange the sliced onions around it. Brush the remaining melted butter around the chicken and sprinkle with a generous amount of salt and pepper. On the bottom of the pan, pour some water.
  4. Reset the oven to 425°F, and roast the chicken for good 50 minutes. Make sure the water doesn’t dry out completely (add some more if necessary), until 165°F is recorded on the thermometer when put into the thickest area of the thigh.0

5. Once done, let the chicken rest for at least 15 minutes before making the first carve. Also, drizzle the remaining juices in the pan over the chicken, and serve it with your choice of salad or any other garnish.
