This breakfast is also simple to adapt to your preferences and dietary requirements. If you’re vegan, simply substitute plant-based milk for cow’s milk. Choose gluten-free granola or other toppings if you’re gluten-free.

Ingredients

Avocado- 2 medium

Baby spinach leaves- 20-30 leaves

Bananas- 4 (peeled & frozen)

Pistachios- 3 tablespoons (blanched & peeled)

Milk- 2 cups

Kiwi- 2 (peeled)

For Garnish

Banana slices

Fresh pomegranate pearls

Cranberries

Halved almonds

Kiwi slices

(You can add any other fruits or toppings of your choice to garnish)

Method

First, de-seed the avocado and remove the pulp. Transfer the pulp to the blender jar. Then, add banana, baby spinach leaves, peeled pistachios and milk into the blender jar and blend all of the ingredients together and make a smooth paste.

Transfer the paste to a bowl and fill the bowl halfway with the mixture and top with banana slices, cranberries, almonds, kiwi, and fresh pomegranate pearls or you can garnish this avocado paste with your favourite toppings like coconut flakes, granola, and nuts etc. You can even keep this avocado paste in an airtight container for 3 to 5 days in the fridge.
